New Orleans summers are something else entirely - and they start early and stay late. While most of the country experiences summer heat from June through August, our warm season runs from April all the way through late November. That's a long time to be asking chocolate to hold its shape in the back of a delivery truck.

Real chocolate - like we use with actual cocoa butter, softens at 82°F. Delivery vehicles and front porches down South get a whole lot hotter than that. So when the temperatures rise, we take extra care to make sure what you ordered arrives the way we intended it: Ready to eat, delicious, and intact.

That's what our Cold Pack Protection is all about. It's not an extra charge for the sake of it - it's us doing right by your order.

Adding Cold Pack Protection to your order is easy. Here's exactly what happens from the moment you place your order to the moment your candy arrives at your door.
1 You Place Your Order
Add Cold Pack Protection at checkout. During warm months (April-November), you'll see it recommended for any order containing chocolates, tortues, toffees, or barks. Pralines-only orders are more heat-tolerant and don't require Cold Pack as an option.

2 We Pack It Fresh
The morning it ships every Gift Box is hand-packed the same day it goes out. We check the forecast for your delivery area, and include the number of Gel Packs ordered.

3 We Only Ship Monday - Thursday
We only ship Cold Pack orders Monday through Thursday. This means your package never sits in a FedEx facility over the weekend where we can't control the temperature. Orders placed after 2 PM on Thursday will ship the following Monday. It's worth the wait, we promise.

4 You Receive It - and Open It Right Away
When your package arrives, we ask that you open it promptly. Our Gel Packs work hard to protect your candy in transit, but once it arrives, the best place for your chocolate is in a cool (away from sun) area where it can sit for a bit, not in a warm mailbox or a sunny porch. Your Candy Care Card, inside your box will walk you through unpacking.

We Thought You Might Ask...

Can you really ship chocolate in the summer?

Yes, we absolutely can - and we do it every day during the warm season. The key is Cold Pack Protection paired with the right shipping speed.

Our frozen Gel Packs keep your package cool for UP TO 48 HOURS, so as long as your candy travels 2-Day or Overnight, it arrives in good shape. We also watch the weather forecast for your delivery area, so if conditions are extreme, we may reach out to discuss the best option for your order.

What's the difference between Cold Pack Protection and just choosing Overnight shipping?

Great question! They work together, not instead of each other. Overnight Shipping gets your package there faster - which means less time in the heat.

Cold Pack Protection is the insulated packaging and frozen Gel Packs inside the box that actively keep your candy cool during that time. You need both. Overnight Shipping without Cold Pack is like a fast car with no air conditioning - you'll get there quicker, but you'll still feel the heat.

What if I only ordered pralines? Do I still need Cold Pack?

Pralines are our most heat-tolerant item - they have a melting point close to 250°F, which means they can handle a warm journey much better than chocolate. For pralines-only orders, even chocolate pralines, Cold Pack Protection is not required, even during our hottest days. That said, if you're in the middle of a Southern heat wave or your package is traveling a long distance, they can still withstand the heat.

Why do you only ship Monday through Thursday?

We only ship Cold Pack orders Monday through Thursday so your package is never sitting in a FedEx facility over the weekend. A package that ships on Friday afternoon and sits in a hot warehouse over the weekend, is a package we can't stand behind. We'd rather hold your order and ship it fresh on Monday to better ensure its arrival.

Should I refrigerate or freeze my candy when it arrives?

Refrigerating or freezing your candy is not recommended. Temperature changes - from cold fridge to warm room - can cause the very bloom we work so hard to prevent. The best choice for your candy is to cool in a dry spot, about (65°F - 70°F) and immediately out of direct sunlight. Most of our chocolates keep for up to two months that way, and our pralines about a month.

What is "bloom" and does it mean my chocolate went bad?

Bloom is that white haze or dusty appearance that can appear on the surface of chocolate when it's been exposed to temperature swings. It looks a little alarming, but it is not mold - it's simply the cocoa butter or sugar in the chocolate separating and rising to the surface. It doesn't affect the taste one bit, though it can change the texture slightly. It's a sign the chocolate got a little too warm somewhere along the way. Cold Pack Protection is designed to try our best from preventing your chocolate bloom.
